  • ½ teaspoon organic ground ginger
  • ¼ teaspoon organic ground nutmeg
  • 1 teaspoon pure organic vanilla extract
  • ¼ cup raw organic honey
  • ¼ teaspoon mineral-rich sea salt
  • ½ cup raw organic walnuts, chopped (optional)

Why These Ingredients Matter

🎃 Pumpkin – Provides beta-carotene, fiber, potassium, and beneficial plant compounds.

🌾 Oats – Provide whole-grain carbohydrates and soluble fiber, including beta-glucan.

🌱 Flaxseed – Provides fiber and plant-based omega-3 fats.

🤎 Ceylon Cinnamon – Provides naturally occurring antioxidants and warm flavor.

🫚 Ginger – Provides naturally occurring plant compounds and has traditionally been used to support healthy digestion.

🌰 Nutmeg – Adds warm fall flavor and naturally occurring plant compounds.

🍯 Raw Honey – Provides natural sweetness and naturally occurring plant compounds.

🧂 Mineral-Rich Sea Salt – Provides sodium and naturally occurring trace minerals.

🌰 Walnuts (Optional) – Provide healthy fats, antioxidants, and plant-based omega-3 fats.

Instructions

  1. Preheat the oven to 350°F.
  2. Line a baking sheet with unbleached parchment paper.
  3. Add the pumpkin purée, diced apple, vanilla, and honey to a large bowl and stir to combine.
  4. Add the rolled oats, freshly ground flaxseed, cinnamon, ginger, nutmeg, mineral-rich sea salt, and walnuts if using.
  5. Stir until everything is evenly combined.
  6. Let the mixture rest for about 10 minutes. This gives the oats and ground flaxseed time to absorb some of the moisture.
  7. Scoop the mixture onto the prepared baking sheet and gently flatten each cookie with the back of a spoon. These cookies will not spread much while baking.
  8. Bake for approximately 15–20 minutes, or until set and lightly golden around the edges.
  9. Allow the cookies to cool before serving.
EHI Tip: Choose organic ingredients. Grind flaxseed fresh before adding it to the recipe. Whole flaxseeds can pass through the digestive tract largely intact, while grinding them makes their beneficial fats and nutrients more accessible.
🎃 Fun Fact: Pumpkin gets its bright orange color from carotenoids, including beta-carotene, which the body can convert into vitamin A.
