🥦 Brussels Sprouts – Provide fiber to support digestive health and vitamin C to support normal immune function.
🥜 Pecans – Contain heart-healthy unsaturated fats, antioxidants, and important minerals.
🍁 Pure Maple Syrup – Adds natural sweetness and small amounts of minerals, including manganese.
🥑 Avocado Oil – Provides monounsaturated fats and works well for high-heat roasting.
Preheat the oven to 425°F.
Trim and halve the Brussels sprouts.
Toss the Brussels sprouts with avocado oil, maple syrup, sea salt, black pepper, and optional garlic powder.
Arrange cut-side down on a baking sheet in a single layer.
Roast for 20 minutes.
Sprinkle the chopped pecans over the Brussels sprouts.
Return to the oven for another 5–10 minutes, until the sprouts are tender and lightly caramelized and the pecans are toasted.
Drizzle with apple cider vinegar if desired and serve warm.
Store leftovers in an airtight container in the refrigerator for 3–4 days. Reheat in the oven or air fryer until thoroughly heated to help bring back their roasted texture.
Brussels sprouts provide fiber, vitamin C, and natural plant compounds called glucosinolates. Pecans contain unsaturated fats, antioxidants, and minerals. Together, they add nutrients that support digestive health and normal cellular function.
