Ingredients

  • 2 medium organic sweet potatoes, cubed
  • 3 cups organic kale, stems removed and chopped
  • 1½ cups cooked organic white beans, rinsed and drained
  • 1 cup cooked organic quinoa
  • ½ small organic red onion, thinly sliced
  • ¼ cup raw organic pumpkin seeds
  • 2 tablespoons fresh organic parsley, chopped
  • Mineral-rich sea salt, to taste
  • Freshly ground organic black pepper, to taste

Lemon Tahini Dressing

  • 2 tablespoons organic tahini
  • Juice of 1 organic lemon
  • 1 small organic garlic clove, minced
  • 2–3 tablespoons filtered water, as needed
  • Pinch of mineral-rich sea salt

Instructions

  1. Preheat the oven to 375°F.
  2. Place the cubed sweet potatoes in a baking dish with a small amount of filtered water. Cover and bake until just tender, then uncover briefly to allow excess moisture to evaporate.
  3. Prepare the quinoa according to package directions using filtered water.
  4. Gently steam the kale until bright green and just tender.
  5. Warm the white beans gently with a small amount of filtered water if you prefer them warm.
  6. Chop or crush the garlic for the dressing and allow it to rest for about 10 minutes.
  7. Whisk together the tahini, lemon juice, garlic, mineral-rich sea salt, and enough filtered water to reach your desired consistency.
  8. Divide the quinoa between bowls and add the sweet potatoes, kale, white beans, and red onion.
  9. Top with raw pumpkin seeds and fresh parsley.
  10. Drizzle the lemon tahini dressing over the bowl just before serving.
