Ingredients

  • 1 cup organic dry red lentils, rinsed well
  • 5 organic carrots, chopped
  • 1 small organic yellow onion, chopped
  • 3 organic garlic cloves, minced
  • 1 tablespoon freshly grated organic ginger
  • 1 organic celery stalk, chopped
  • 5 cups filtered water or organic low-sodium vegetable broth
  • 1 teaspoon organic ground turmeric
  • ½ teaspoon organic ground cumin
  • Mineral-rich sea salt, to taste
  • Freshly ground organic black pepper, to taste
  • 2 tablespoons fresh organic cilantro or parsley, chopped
  • 1 tablespoon organic extra virgin olive oil, added after cooking
  • Fresh organic lemon juice, to tas

Instructions

  1. Rinse the red lentils thoroughly under cool filtered water.
  2. Add the carrots, onion, celery, red lentils, turmeric, cumin, and filtered water or vegetable broth to a large pot.
  3. Bring to a gentle boil, then reduce the heat and simmer for about 20–25 minutes, until the lentils and vegetables are tender.
  4. Chop or crush the garlic and let it rest for about 10 minutes.
  5. Add the garlic and freshly grated ginger during the final few minutes of cooking.
  6. Remove from the heat and blend with an immersion blender until smooth and creamy. Leave some texture if desired.
  7. Stir in mineral-rich sea salt and freshly ground black pepper to taste.
  8. Finish each bowl with fresh lemon juice, chopped cilantro or parsley, and raw extra virgin olive oil.
