Ingredients

  • 3 cups organic green cabbage, thinly shredded
  • 1 medium organic apple, thinly sliced or grated
  • 2 medium organic carrots, grated

  • 2 tablespoons organic extra virgin olive oil
  • 2 tablespoons organic apple cider vinegar
  • 1 tablespoon fresh organic lemon juice
  • 1 teaspoon raw organic honey
  • ½ teaspoon mineral-rich sea salt
  • Freshly ground organic black pepper, to taste

Instructions

  1. Add the shredded cabbage, apple, carrots, parsley, and pumpkin seeds to a large bowl.
  2. In a small bowl, whisk together the extra virgin olive oil, apple cider vinegar, lemon juice, raw honey, mineral-rich sea salt, and black pepper.
  3. Pour the dressing over the slaw.
  4. Toss gently until everything is evenly coated.
  5. Let the slaw rest for 10–15 minutes before serving to allow the cabbage to soften slightly and the flavors to combine.
  6. Toss once more and enjoy fresh.
