Ingredients

  • 1 cup organic dry green or brown lentils
  • 3 cups filtered water
  • 1 cup organic cherry tomatoes, halved
  • 1 organic cucumber, diced
  • ½ organic red bell pepper, diced
  • ¼ organic red onion, finely diced
  • 2 cups organic baby spinach, chopped
  • ¼ cup fresh organic parsley, chopped
  • ¼ cup organic raw walnuts, chopped
  • Juice of 1 organic lemon
  • 2 tablespoons organic extra virgin olive oil
  • 1 organic garlic clove, minced
  • ½ teaspoon dried organic oregano
  • Mineral-rich sea salt and freshly ground black pepper, to taste

Instructions

  1. Rinse and sort the lentils.
  2. Add the lentils and filtered water to a pot and bring to a gentle boil.
  3. Reduce the heat and gently simmer until the lentils are tender but still hold their shape, about 20–25 minutes. Drain any remaining water and allow them to cool.
  4. Add the tomatoes, cucumber, red bell pepper, red onion, spinach, parsley, and walnuts to the cooled lentils.
  5. Mince the garlic and allow it to sit for 5–10 minutes.
  6. Whisk together the lemon juice, extra virgin olive oil, garlic, oregano, sea salt, and black pepper.
  7. Pour the dressing over the salad and gently toss.
  8. Enjoy immediately or chill before serving.
