Ingredients

  • 2 medium organic beets
  • 2 cups organic broccoli florets
  • 2 organic garlic cloves, freshly minced or pressed
  • 2 tablespoons fresh organic parsley, chopped
  • Juice of ½ organic lemon
  • 1 tablespoon organic extra virgin olive oil, added after cooking
  • 1 tablespoon organic pumpkin seeds
  • Sea salt, to taste
  • Freshly ground black pepper, to taste

Instructions

  1. Wash the beets thoroughly. Cut into quarters, leaving the skin on.
  2. Steam the beets for about 15 minutes, or until easily pierced with a fork. Allow them to cool slightly, then gently remove the skins. WHFoods specifically recommends steaming cut beets rather than prolonged cooking.
  3. While the beets cook, mince or press the garlic and allow it to rest for at least 5 minutes before using.
  4. Cut the broccoli into bite-sized florets and steam for about 5 minutes, just until bright green and tender.
  5. Add the beets and broccoli to a bowl.
  6. Top with the garlic, parsley, pumpkin seeds, fresh lemon juice, and extra virgin olive oil.
  7. Season lightly with sea salt and freshly ground black pepper.
  8. Toss gently and enjoy warm.
