Ingredients

  • 6 cups homemade organic vegetable broth
  • 1 medium organic yellow onion, diced
  • 3 organic garlic cloves, minced
  • 2 organic celery stalks, sliced
  • 2 organic carrots, sliced
  • 2 cups organic broccoli florets
  • 2 cups organic green cabbage, chopped
  • 2 cups organic kale, chopped
  • 2 tablespoons fresh organic parsley, chopped
  • 1 teaspoon dried turmeric
  • Freshly ground black pepper, to taste
  • Juice of ½ organic lemon
  • 1 tablespoon organic extra virgin olive oil (optional, stir in after cooking)
  • Sea salt, to taste

Instructions

  1. Add the vegetable broth, onion, garlic, celery, carrots, broccoli, cabbage, turmeric, and black pepper to a large soup pot.
  2. Bring to a gentle boil, then reduce the heat and simmer for about 15 minutes.
  3. Add the kale and continue cooking for another 3–5 minutes, just until wilted.
  4. Remove the soup from the heat.
  5. Stir in the parsley, fresh lemon juice, and extra virgin olive oil (if using).
  6. Season with sea salt to taste and serve warm.
