EHI RECIPE CORNER

-Gluten-Free Acorn Squash, Kale & Caramelized Onion Pizza-

This recipe comes from EHI family member Ana Cris Rodríguez who grew up learning how food can comfort, nourish, and bring the body back into balance. Her own healing journey is woven into everything she makes, and this dish is no different, simple, heartfelt, and created with the kind of intention you can feel.

INGREDIENTS

  • 1 package Simple Mills Almond Flour Pizza Dough (or any pizza dough you prefer) I usually play around with GF flours.
  • 1 small organic acorn squash, peeled and cut into ½-inch cubes
  • 1 pint organic cherry tomatoes ( a blend of colors is my favorite)
  • 1 organic garlic head (yes the whole head)
  • Avocado oil or another high-temperature oil for cooking
  • EVOO to finish
  • A bunch of  fresh thyme (or dried)
  • 2 medium organic onions
  • 4 Tbsp or more, organic balsamic vinegar (divided)
  • 2- 4 Tbl. organic cane sugar (divided), raw honey or organic maple syrup is good too
  • 1 small bunch fresh kale
  • ¾ cup tofu, crumbled
  • 1 Tbsp nutritional yeast (optional)
  • ½ Tbsp Italian herbs
  • Dried  oregano ( I use tons but depends on the amount you prefer)
  • 1 Salt & pepper, to taste

INSTRUCTIONS

  1. Dough
Prepare the pizza crust following the package instructions, or make your favorite homemade version.2.  Roasted Acorn Squash
  1. Toss acorn squash cubes with oil, salt, and pepper.
  2. Roast at 400°F for about 20 to 30 minutes, until roast and tender.
(I saved the seeds to roast for another recipe) 3. Tomato & Garlic Confit
  1. Cut cherry tomatoes in half (reserve about ⅓ cup for topping).
  2. Peel garlic cloves, press them slightly, but  leave them whole. (Wait 10 minutes before cooking )
  3. In a stainless steel pan, toss tomatoes and garlic with avocado oil, thyme, 2 Tbsp balsamic vinegar, 1 Tbl cane sugar, salt, pepper, Italian seasoning and oregano.
  4. Roast at 400°F for about 20 minutes, until tomatoes burst and caramelize slightly.
  5. Lightly crush with a fork and drizzle EVOO to make a chunky sauce and set aside.
 
4. Caramelized Onions
  1. Thinly slice onions into half moons.
  2. Heat a cast iron pan with a little avocado oil, then add onions, 2 Tbsp balsamic vinegar, and 1 tsp cane sugar.
  3. Cook on medium-low, stirring often, until golden and caramelized and season with salt and pepper.
 
5. Tofu Crumble ( you can skip this or sub it with a vegan cheese option, or any cheese of your choice)
  1. Pat dry tofu to remove the moisture.
  2. Crumble and season with nutritional yeast, Italian herbs, oregano, salt, and pepper.
  3. Cook in a hot cast iron pan for about 10 minutes, stirring occasionally, until lightly golden.
 

ASSEMBLY

  1. Spread the tomato & garlic confit over the baked crust.
  2. Add roasted acorn squash cubes.
  3. Layer on caramelized onions.
  4. Top with chopped kale.
  5. Sprinkle the tofu crumble and reserved fresh tomatoes.
  6. Add a touch of dried oregano.
  7. Bake for 15 minutes for a soft crust or 20 minutes for a crispier one and a more roasted squash.

 

Remove from the oven and finish with anything you like, I used microgreens, a drizzle of balsamic glaze, EVOO and a pinch of red pepper flakes.You can pair it with a fresh seasonal salad. I made a spinach, dried organic cranberries salad and added the baked acorn squash seeds I saved from my acorn squash, for a crunchy topping Delicious and no waste! ENJOY
