Winter Squash Miso Soup

Intro

This simple soup is built around just a few ingredients but has many benefits. Winter squash provides fiber and natural carbohydrates that help keep digestion steady and energy grounded. Onion and garlic add immune support, while  parsley supports kidney function and bone health.

Miso is stirred in at the end so its beneficial properties aren’t damaged by heat. It supports digestion and adds depth without making the soup heavy or overly rich. The texture is smooth, easy to eat, and works well for both adults and kids.

This is an easy, low-effort way to serve vegetables, support gut health, and get a warm meal on the table using simple steps and ingredients.

Winter Squash Miso Soup

Ingredients

(Serves a family of 5)

  • 1 medium onion, chopped

  • 3 cups winter squash, chopped (any)

  • 2 cloves garlic, chopped

  • 4 tablespoons miso

  • Water (enough to cover vegetables, adjust for thickness)

  • Chopped parsley, for garnish (optional)

Instructions

  1. Add the winter squash, onion, and garlic to a pot. Cover with water just until the vegetables are submerged.

  2. Bring to a boil and cook until the squash is soft.

  3. Turn off the heat and blend the soup with an immersion blender until smooth and creamy.

  4. Adjust the thickness by adding more water if needed.

  5. Turn the heat back on and warm the soup until just below boiling.

  6. In a separate bowl, mix the miso with about 1 cup of the hot soup until fully dissolved.

  7. Turn off the heat and stir the miso mixture back into the pot.

  8. Garnish with parsley if desired.

Alongside his work at EHI, Kristof continues to expand his education and is preparing to establish his own nutrition practice in the future. Outside of work and school, he enjoys playing soccer and rock climbing with friends.
