EHI RECIPE CORNER

-Fire Cider-

Fire Cider is a classic herbal tonic known for its warmth, its zing, and its incredible ability to wake up the immune system. This simple kitchen remedy has been loved for generations — and today, we’re sharing a batch made with care by our own EHI family member, Arielle Stein who adapted the recipe from Rosemary Gladstar.

INGREDIENTS

  • 2 parts chopped or grated fresh horseradish root
  • 2 parts (or more) chopped onions
  • 1 part (or more) chopped garlic
  • 1 part (or more) chopped or grated ginger
  • 1 part chopped cayenne or other hot pepper (with seeds)
  • Raw apple cider vinegar, preferably organic and with the “mother”
  • Honey to taste (usually less than ½ part)
  • Optional additions: turmeric root, citrus peel, rosemary, parsley, black peppercorns, or any other herbs you love. Fire Cider is a recipe that invites creativity. 

INSTRUCTIONS

  1. Prep the garlic first.
    Peel and finely chop, then let it rest while you prepare the other ingredients — this activates its beneficial allicin.
  2. Finely chop all remaining herbs.
    Small pieces allow the vinegar to extract more of their vibrant compounds.
  3. Fill your jar.
    Choose a clean glass jar and fill it about ¾ full with your chopped ingredients.
  4. Add honey (optional).
    Start lightly. You can always sweeten more after straining.
  5. Pour in the vinegar.
    Fill the jar nearly to the top.
    Tip: Strain the vinegar through a tea strainer if you prefer less of the “mother” in your mixture.
  6. Seal the jar.
    Use a plastic lid, or if using metal, line it with parchment to prevent corrosion.
  7. Let it steep.
    Store the jar out of direct sunlight for 3–4 weeks, shaking occasionally.
  8. Strain well.
    Use a fine mesh strainer. Save the solids if you’d like — they make wonderful additions to soups.
  9. Sweeten to taste.
    Adjust the honey if needed.
  10. Label + store.
    Include ingredients and date. Fire Cider keeps for several months in a cool pantry or refrigerator.

HOW TO ENJOY IT

Take 1–2 teaspoons daily, add a splash to warm water for a morning boost, or mix into soups, broths, and dressings.
